Chef Richard Blais teams up with Austin Beckett, winner of Season 4 of Fox’s Next Level Chef, to showcase the bold, elemental art of grilling over open fire, overlooking the 18th hole of Aviara Golf Club.
This intimate, live demonstration will highlight whole fish butchery and grilling techniques over woodfired coals, infused with Southeast Asian–inspired flavors. Expect locally and regionally sourced fresh catch, along with seasonal vegetables cooked over flame.
Following the demo, enjoy a family-style lunch curated by Blais and Austin, featuring grilled fish, vibrant sides, and fresh salads.

Richard Blais is a successful chef, restaurateur, James Beard nominated cookbook author and television personality. Blais currently co-stars alongside Gordon Ramsay on FOX's hit cooking competition, Next Level Chef, and is widely recognized as the first winner of Bravo's Top Chef All-Stars. He graduated from the Culinary Institute of America and trained at The French Laundry, Daniel, Chez Panisse, and el Bulli. Blais is the James Beard Award-nominated author of “Try This at Home: Recipes from My Head to Your Plate,” as well as his second cookbook, “So Good.” His most recent cookbook, “Plant Forward: 100 Bold Recipes For A Mostly Healthy Lifestyle” was co-written with his wife Jazmin and published in October 2023. Blais has appeared on “Today,” “Good Morning America,” “The Rachael Ray Show” and “Watch What Happens Live with Andy Cohen.” He also has been featured in The New York Times, InStyle and Food & Wine. When not on set, in the kitchen or at home with his family, Blais may be found traveling cross country performing his live “stand up cooking” show to enthusiastic audiences nationwide.
Bringing more than 20 years of esteemed culinary experience to the Ember & Rye table, Executive Chef Jonathan Bautista is a proud San Diego native and James Beard Foundation Awards semifinalist nominee with a deep-rooted understanding of the region’s refreshing and flavorful dining scene. In this new venture with Ember & Rye, Chef Bautista will showcase his award-winning talent and decades of relationships with local San Diego farmers, produce growers, and markets to create a new iteration of the esteemed Ember & Rye dining experience, in collaboration with Chef Richard Blais. Celebrating his Canadian Filipino background, Chef Bautista’s innovative new offerings blend signature flavors through seasonings, local ingredients, and unique cooking techniques, resulting in a fresh take on Ember & Rye’s beloved menu of vintage steaks, fresh seafood, and seasonal vegetables. Chef Bautista is most excited to introduce refined American cuisine through a vintage club-inspired lens, beautifully paired with creative specials and tableside presentations, engaging programming and unique culinary activations for members, guests, and locals alike.
