With more than three decades of experience, Executive Chef Pierre Albaladejo oversees Park Hyatt Aviara Resort, Golf Club & Spa’s complete culinary operations, including three restaurants, the lobby lounge, banquet facilities, room service, menu and recipe development, and management of the hotel’s kitchen staff. Originally from Dax, France, Chef Albaladejo graduated from the Culinary Institute Lycee d’ Enseignement Professionel de Capbreton in Landes, France and held posts at the three-star Lucas Carton in Paris, two-star Café de Paris in Biarritz and Palais de L’Elysee in Paris in the private kitchen of President Francois Mitterand. Chef Albaladejo’s passion lies in the inspiration and creation of new dishes with an emphasis on utilizing fresh, local produce and paying respect to each ingredient in order to maximize taste. In 2020, Chef Pierre led the transformation of all resort outlets which was part of the $50 million property-wide renovation. Chef’s next endeavor is leading the culinary design and concept for Miraval Life in Balance Spa Aviara which will offer specialty culinary classes and experience and will debut in fall 2023.
With over 20 years of experience in the sushi industry, Chef Nguyen has developed a unique style of sushi-making that blends traditional techniques with modern flavors and ingredients. Coming from Nobu San Diego, he is known for his use of locally sourced, sustainable seafood and his commitment to using only the freshest, highest quality ingredients. His passion for sushi and dedication to his craft has proved him as a reputable sushi chef at Pacific Point, Lobby Bar.
With over 15 years in the Culinary industry, Chef Shawna oversees the Pastry Kitchen that produces all sweet treats, desserts, breakfast pastries, Wedding cakes, and specialty cakes for Park Hyatt Aviara’s outlets and banquets. Graduating from The Culinary Institute of America, Shawna has honed her craft and developed a deep understanding for the art of pastry. Throughout her career Shawna has participated in a number of cake competitions, showcasing her exceptional talent and creativity. Her dedication and passion for her craft has earned her remarkable achievements, including securing the first- place position in the highly competitive Long Beach cake competition and a commendable second-place finish in the San Diego cake competition. Shawna constantly strives to push the boundaries of traditional techniques, infusing her creations with a unique and contemporary flair.
