At Park Hyatt Aviara Resort, Golf Club & Spa, we are dedicated to sustainability and are committed to making a difference through our daily processes.

We’re committed to reducing our environmental impact by using smart energy systems throughout the property. Guestrooms are equipped with occupancy‑sensing automation that adjusts heating and cooling only when rooms are in use. In public areas and meeting spaces, a programmable Lutron lighting system ensures lights run efficiently, and exterior landscaping lights operate on timers or photocells to avoid unnecessary energy use. Back‑of‑house spaces also rely on occupancy sensors, and meeting room lights are turned on only as needed—helping us conserve energy without compromising comfort.

We also use high‑efficiency lighting across the hotel, with over 85% of our bulbs replaced by energy‑saving options like LEDs and fluorescents. Guests can join our conservation efforts through programs such as opting out of daily housekeeping to reduce water and energy use. Our Conserve program refreshes linens every third day unless requested otherwise, and towel reuse is encouraged. For meetings and events, we offer sustainable décor alternatives—like potted plants instead of cut flowers—to support resource conservation and reduce waste.

We’re committed to reducing waste and supporting a circular approach to how we use resources. We’ve eliminated plastic straws, are transitioning all paper and plastic products to fully compostable options, and provide hydration stations to help guests cut back on single‑use bottles. Throughout the hotel, recyclables are separated and collected bi‑weekly, and food waste is thoughtfully managed—donating recoupable items to local food banks and composting the rest. Our linen practices also support this effort: towels left hanging are not replaced, worn linens are donated when possible, and damaged towels are repurposed into cleaning rags. To further reduce material waste, we offer mobile entry through the World of Hyatt app, use digital signage, and provide meeting planners with online reports through the Planner Portal, helping limit the need for printed materials.

Our culinary program is guided by Hyatt’s Food. Thoughtfully Sourced. Carefully Served. philosophy, ensuring we choose ingredients that support the wellbeing of people, communities, and the planet. We proudly use cage‑free eggs in our restaurants, continually increase our selection of sustainably sourced seafood, and prioritize organic, locally purchased produce whenever available. Our beef offerings are all‑natural and grass‑fed, and we feature a variety of plant‑based and plant‑forward menu options across both restaurant dining and event catering—providing guests with delicious choices that also reduce environmental impact.

At Aviara Golf Club, we’re investing in long‑term sustainability to preserve the course and surrounding environment for years to come. Our fleet of electric golf carts helps reduce emissions during play, and a recent $6 million investment supports ongoing environmental stewardship across the property. As part of these improvements, we replaced the golf course grass with a more efficient variety, reducing water use by approximately 20 percent, equating to over 25 million gallons of water saved while maintaining exceptional playing conditions.

Executive Sous Chef & Sustainability Leader - Chef Jesse Paul

"Being part of a large luxury resort gives us the opportunity to be impactful to our community with leading by example. Showing our neighbors that if we can be environmentally responsible, then anyone can play a part and contribute to proactively lessening our carbon footprint.

With how dynamic our operation is, we can produce quite a lot of waste. Because of this, we put in the work to quantify and separate our compostables, recyclables, land fill waste, and donatable consumables. Park Hyatt Aviara intends to be a sustainable steward for our local environment and our community."
